Have you ever tried a vegan tiramisu' that tastes just like the classic one, but it doesn't contain any dairy and it is made from cashews? Here is our recipe ;)

Here at Nutrition Green we love tiramisu’ and, even if we already have a recipe on our website, we wanted to experiment with a vegan version of the classic. This version is made with cashews which give the dish a sweet flavour and a creamy texture. Cashew nuts are native to Brazil and the West Indies. They are a versatile ingredient, as they can be eaten as snacks, they can be added in curries and stir-fries, they can be used to make vegan cheese and they can also be used to create vegan cream (like in this case). More people are using cashews nowadays, as they represent a great alternative to cheese or creams which contain dairy and are high in saturated fats. While cheeses and creams like double cream or single cream or mascarpone are high in saturated fats, which are the “bad fats”, cashews are high in unsaturated fats, which are the “good fats”. They are also low in sugar and they contain almost the same amount of protein as an equivalent quantity of meat. This is also another reason why many people adhering to a vegan or vegetarian diet use them. In addition, cashews contain a significant amount of copper, a mineral essential for energy production, healthy brain development and a strong immune system. Moreover, cashews provide several benefits including support to gut health, heart health and weight management. They are rich in substances called polyphenols that help to keep our gut healthy as well as phytosterols and proteins which help relax blood vessels and lower blood pressure.
What you need:
63 g of tea biscuits (vegan)
50 g of cashews
50 ml of soy milk
15 g of agave
30 ml of black coffee
10 g of cocoa powder
Allergens: gluten, nuts, soya
Method:
Add your biscuits on a tray, then make your coffee. You can make it with the moka or you can just boil some water and add the coffee beans.
Once the coffee is ready, use it to wet the biscuits in the tray.
Then prepare your cashew cream: boil some water and leave the cashew in boiling water for 10 minutes or until they get soft. Then, add them into a blender with the milk and the sweetener. Blend everything until you achieve the consistency of a cream.
Pour half of your cream on top of the biscuits.
Then add the rest of the biscuits on the tray and on top of it the rest of your cashew cream.
Finally, sprinkle some cocoa powder on top of your tiramisu' and refrigerate it for 3 hours before serving it.
