Spinach pancakes 🥞🥬

Spinach belongs to the chenopodiaceae family, which includes beetroot, chard and quinoa. It is an excellent source of vitamin K and iron. Vitamin K is important for bone health and blood clotting. Iron is a mineral that plays a central role in transporting oxygen around the body and supporting energy production. For this reason, spinach is a vegetable that restores energy, provides vitality and improves the quality of the blood. It is also very rich in antioxidants, especially lutein which promotes eye health and reduces risk of macular degeneration. Raw spinach especially has the highest lutein content. Researchers have shown that lutein content drops by 40% after boiling spinach for only four minutes and by 90% after boiling spinach for nineteen minutes. Moreover, lutein levels decrease by more than 60% after frying the spinach and by 50% after steaming it. Therefore, it is suggested to consume raw spinach rather than cooked, as it has a higher nutritional value. Spinach provides many health benefits including a better eyesight, due to the lutein content, greater energy, due to the iron content, healthier heart, due to the nitrates which improve blood flow and reduce blood pressure, and healthier bones, due to the vitamin K content. The only drawback of consuming this green vegetable is that it contains high amount of oxalic acid, which reduces iron availability, and it is “toxic” for people with a history of oxalate-containing kidney stones.


What you need:

124 g of wheat flour

250 g of oat milk

80 g of spinach

1/2 tsp of olive oil


For filling:

Anything you want but we used aborigine, peppers, avocado, tomatoes, onions, mushrooms, feta and Greek yogurt.

Health Claims: the recipe is high in vitamin K and is a source of folate and manganese

Per 100 g
114 g (1 serving)

Method:

1. Blend your flour, milk and spinach

2. Pour your oil into a very hot pan

3. Pour one ladle of pancake mixture into the pan for one minute

4. Flip and cook for a further minute

5. Repeat this process until you have finished your mixture

6. Serve your pancakes with savoury fillings like the ones we suggested above
