Soft and crunchy cinnamon cupcakes

Mornings just got even better with this delightful breakfast

Cinnamon is a delicate and fragrant spice that is typically used in sweet bakes and savoury curries. However, cinnamon is not only a spice used for cooking and there is much more to learn about this ingredient. It has anti-viral and anti-bacterial properties, and for this reason, it can be used as a natural preservative in food to prevent microbial contamination. It is particularly used in hot countries like India where the risk of contamination is higher, due to the tropical weather. Moreover, cinnamon contains essential oils that have anti-inflammatory properties and several health benefits. The number one health benefit that is associated with the consumption of cinnamon is the reduction of blood sugar level. Several studies have demonstrated glucose management with cinnamon in diabetic patients. The studies have established that cinnamon, when taken in a dose of 120 mg/day to 6 g/day for 4 months, leads to a decrease in levels of plasma glucose along with an improvement in the lipid profile.

Another interesting benefit of cinnamon is its anti-aging properties. For example, in patients that have Alzheimer’s disease, the accumulation of protein fragments in the brain acts by slowing how a person thinks and remembers. Cinnamon contains compounds that inhibit the build-up of these proteins. Therefore, it helps to prevent age-related cognitive diseases and it is considered a cognition enhancer.

We recommend using it in place of sugar, as it is helps to stabilise blood sugar, reduce the risk of type-2 diabetes, improve cognition and has a sweet taste!


What You Need:

62 g of flour

1 tsp of cinnamon

160 g of soy milk

1 tsp of vanilla extract

20 g of brown sugar

30 g of cinnamon toast crunch cereals


Allergens: Contains gluten, soya. May contain tree nuts, peanuts, milk

Per 100 g

Method:

  1. Preheat your oven to 200 degrees celsius

  2. Pour your flour, cinnamon, brown sugar, vanilla extract, and soy milk

  3. Mix well

  4. Place your mixture into small muffin paper cones

  5. Add your Cinnamon Toast Crunch cereal into the cones to make a pattern like the image above

  6. Place your muffin cones into the oven

  7. Bake for 30 minutes

  8. Take out the oven and let cook before consuming
