This recipe gives you an idea on what you can do with leftover bread. Instead of wasting the bread that becomes stale, causing damage to the environment, you can use your stale bread to prepare a variety of delicious recipes. One of these is panzanella, a typical dish of Tuscany. The main ingredient is the stale bread that is soaked in water and mixed with vegetables. Which then makes for a very tasty dish. Bread has always been seen as a carbohydrate source that increases fat intake in people if it is not used as energy. However, carbohydrates and grains are needed for a balance diet. In the Mediterranean regions (especially in Italy), bread is always served on the table. 83% of Italians reported that they eat bread every day and only 10% of the population is obese. This is because many people think that obesity is associated with carbohydrates. It is obviously recommended to not exceed your carbohydrate intake, but what really needs to be avoided are trans fats and saturated fatty acids. According to the UK government’s national diet and nutrition survey, bread provides a little more of 10% of dietary energy, and nearly 20% of dietary fibre. It also has prebiotic properties, as it encourages the growth of commensal bacteria in our gut. There are two main types of bread, white and brown. Brown bread is healthier because it has a lower glycaemic index; it is digested more slowly, giving you energy for longer. As bread can be made with different flours, there are also gluten-free breads if you are celiac. Therefore, don’t worry about gaining weight with bread. Just enjoy bread in any way you like!


What You Need (1 serving):

70 g Tuscanian bread

140 g tomatoes

20 g onions

150 g cucumber

4.2 g olive oil

3.8 g of vinegar

A pinch of salt

A pinch of pepper


Allergens: gluten, soya, sulphites

1 serving

Method:

1. Leave your bread in the open and uncovered until it gets stale

2. Soak it in water and drain

3. Chop your tomatoes, red onions and cucumbers

4. Add them to the bread

5. Spread some olive oil, salt and vinegar

6. Leave it in the fridge for 1-2 h and serve cold
