The main ingredient of this dish are potatoes. Potatoes are very popular in the UK. They can be eaten in different ways. For example, roasted, baked, boiled or fried. However, fried potatoes are not recommended for a healthy lifestyle, as they contain saturated fats and acrylamide, a toxic compound. It is also possible to make delicious dishes with them such as gnocchi, rƶsti or tortilla. The dish that we present is a modified version of the original one. The reason as to why people consume large amounts of potatoes are attributed to the fact that they are cheap, affordable and healthy. They are a good source of vitamin C which helps the body absorb calcium and iron. They also contain some vitamin B6 (folic acid) that helps carry oxygen around the body and potassium that controls the balance of fluids in the body. It is recommended to eat the potatoes with the skin, as the skin offers iron and fibre. There are interesting studies that have been conducted about potatoes. Researchers at the institute of Food Research have found molecules in potatoes called kukoamines that helps lower blood pressure. Another important fact to mention is that potatoes are very low in energy density similar to legumes. Moreover, they are an important staple food that has contributed to prevent malnutrition in impoverished areas like Africa and South America.


What You Need (1 serving):

80 g of red peppers

2 potatoes

Ā½ Onion

4 g of parsley

3 eggs


Allergens: Eggs

1 serving

Method:

1. Dice your onions and cut your peppers length ways

2. Add your onions and peppers to a hot pan with olive oil for 15 minutes until they soften

3. At the same time, boil your potatoes

4. In a bowl, crack three eggs with fresh parsley and mix

5. Add your peppers and onions to the bowl of eggs

6. Then add your cooked potatoes

7. Put your mixture in a pan and let it heat until your meal is ready

8. Enjoy!
