This homemade ketchup is made with a sugar replacer which is a spent grain. It is a cereal powder derived from malted barley. Nowadays, it is very important to find alternatives to sugar, as obesity has tripled since 1975. The WHO estimates that there are 1.9 billion overweight adults in the world and 650 million of which are obese. If the consumption of sugar remains as high as it is now, it is estimated that there will be 1.12 billion of obese people worldwide by 2030. For this reason, WHO recommends reducing the intake of free sugars to less than 10% of total energy intake in both adults and children. In the UK, Public Health England has launched a sugar reduction programme that challenges all food and drink industries to reduce sugar by at least 20%. This can be achieved through the reduction of portion sizes along with a gradual sugar reduction or through the use of sugar alternatives. Natural sweeteners such as monk fruit or stevia leaves are becoming popular due to their natural origins and their clean profile. However, replacing sugar with sugar alternatives involves some technical challenges. The main technical challenge is to find an alternative that performs all the functions of sugar which are sweetness, browning, freezing-point, preservation and bulking. A possibility is the use of spent grain. This ingredient is used for this homemade ketchup and it contains more protein and fibre than sugar and 25% less calories than sugar. it allows for up to 50% sugar reduction. What You Need (1 serving):
0.5 g of cinnamon
1.6 g of garlic powder
0.9 g of cayenne pepper
46 g of vinegar
420 g of tomatoes or 15 g of tomato paste
1 g of salt
0.5 g of paprika
5 g of spent grain (sugar replacer)
A cup of water
Allergens: Sulphites
Method:
1. Boil your tomatoes in a pot and once they get soft, blend them in order to achieve a tomato cream.
2. Boil your cream and slowly start adding your spices, vinegar and sugar replacer.
3. Allow it to a boil at a low heat until you achieve the same consistency of ketchup.
4. Your creamy ketchup is ready to be served.
