Halloween Pumpkin Pie 🥧

A sweet dessert to go along with your Halloween trick or treats!

Pumpkins are a great source of potassium and beta-carotene which is a carotenoid that is converted into vitamin A. It is responsible for the bright orange colour of the pumpkin. Beta-carotene is important to maintain a healthy eyesight. It prevents macular degeneration, retinal disturbances and improves vision at night. It also contributes to maintaining healthy skin. For example, if you want to get a tan, beta-carotene helps without risk of sunburn. It therefore protects against the sun’s UVB rays, maintaining healthy and smooth skin. Pumpkins are seasonal in autumn and they are the typical vegetable of Halloween. Each year 12.6 million pumpkins go to waste. When they decompose, they release methane, which is a harmful gas that contributes to climate change.

What can you do to prevent pumpkin waste? Here are some recipe ideas: pumpkin soup, pumpkin pie, pumpkin hummus, pumpkin tortelli and pumpkin biscuits. You can also use the pumpkin seeds which are a good source of healthy fats such as omega-3 fatty acids which are a good fish substitute. They are also rich in magnesium, which is needed for sleep regulation, improving sleep quality.

What You Need:

450 g pumpkin

50 g sugar

One tin of coconut cream

100 g of vegan biscuits

Pie crust

Method:

1. Skin your pumpkin and chop into chunks

2. Boil your water and place your pumpkin into the water

3. Leave for thirty minutes until soft

4. Drain most of your water only leaving a little

5. Add coconut cream and mix with your pumpkin

6. Add your sugar to mix

7. Use a blender to blend your pumpkin with coconut cream

8. Let your mixture sit

9. Grease your tray with olive oil

10. Place your pie crust in the tray

11. Crush your biscuits

12. Add half of your biscuits to the tray

13. Next, add your mixture to the tray

14. Place the pie in the oven on 140 degrees for 45 minutes

15. Take the pie out of the oven and let sit for 10 minutes

16. Add a sprinkle of sugar and the remaining crushed biscuits for garnish
