Fresh and seasonal cereal cupcakes with fruit

If you are craving something fresh in this hot temperature, these cereal cupcakes with seasonal fruit are ideal as a snack, for breakfast or as a dessert!

Cereals are one of the best choices for breakfast, as they are rich in fibre, vitamins, minerals and antioxidants, and you can buy them on a budget! You can pair them with milk or yogurt for protein and calcium and with fresh fruit for natural sweetness and extra fibre.


Cereals are an important source of fibre which provides several health benefits such as lowering cholesterol levels, helping control blood sugar levels and giving you satiety. We should consume 30 g of fibre a day. However, in the UK the majority of people only consume 18 g. Therefore, consuming cereals for breakfast is an ideal way to achieve the recommended amount of fibre and start your morning with energy. In addition to being a convenient, nutritious and tasty start to each morning, cereals help children to intake a good amount of calcium, which is essential for strengthening bones and teeth.


Furthermore, adding cereals to your diet will help you to avoid skipping breakfast. This is very important, because eating breakfast is linked to a lower risk for diabetes, obesity and blood pressure. Bypassing breakfast can lead to a number of problems, ranging from low energy to weight gain and a greater risk of diabetes. Studies have shown that people who consume cereals daily, especially whole grain cereals, significantly decrease their risk of developing type-2 diabetes. Finally, cereals are usually fortified with essential nutrients like iron, riboflavin and niacin, and they provide almost 30% of total calories in a regular diet. What You Need:

135 g of 0% fat Greek yogurt

110 g of bananas

6 g of cherries

15 g of apricots

1 tsp of honey

50 g of cereals with no added sugars


Allergens: gluten


Per 323 g of serving


Per 100 g


Method:

  1. In a bowl, mash the banana, add the cereals and the honey.

  2. Mix all of them together and use your hands to create a cupcake shape.

  3. Pour your mixture into a cupcake tray and bake for 20 min on 180 degrees celcius.

  4. Once your cupcakes are ready, serve them with some Greek yogurt and fresh fruit.
