Cool Caramalised Onion and Caprino Sandwhich 🧅

A sweet and savoury dish, perfect for afternoon tea… and with tea! 😉☕️

Onion (Allium cepa) is a vegetable that is worldwide known for its medicinal properties. Since the Roman Empire, onions were used as a cure for the common cold and influenza and, nowadays they are used for flavouring dishes and for preventing cancer. Several studies have shown an association between increased onion intake and decreased cancer risk. Onion contains sulphur compounds that have anticancerogenic, antimicrobial and antioxidant properties. Different studies have recommended a diet based on onion consumption for treating cancers of the gastrointestinal tract. Onions also contain a compound called allyl propyl disulphide that has a similar effect to insulin in regulating blood sugar levels. Therefore, they can be used for people who suffer from hypoglycaemia.


From a nutritional point of view, onions contain natural sugars, vitamin A, C, iron, fibre and folic acid. They are optimal in the improvement of the health of eyes due to the vitamin A content and for pregnant women due to folic acid content. Raw onions provide more nutritional properties than cooked onions! Raw onions contain a variety of sulphur compounds that provide health benefits, while when we cook them, the heat destroy some of these compounds. These are the same compounds that make us cry when we chop them. 😭

The onions used in this recipe are the red onions from Tropea and they have been shown to have better antioxidant properties than the white onions due to their higher amount of anthocyanins and flavonoids.

What You Need

One red onion

Two tablespoons of brown sugar

One and a half cups of water

Half a baguette

Caprino cheese (as much as you want!) Get cheesy with it 😏🧀

Two tablespoons of olive oil

Method

Peel and cut your red onion in circular slices and set aside.

Heat a pan on a high flame and add your olive oil, after 30 seconds, add your onions and let fry. After one minute, reduce your heat to a low flame. At this point add your sugar and water and gently stir for two minutes. Lower your heat more and cover your pan.

During the next 30 minutes, check on your onions three times with a 10-minute gap between each check. During each check, gently stir your onions. Your aim here is to get the onions to start thickening up in a golden-brown syrup. If after 30 minutes, they are not thick enough, continue for an additional 10 minutes.

Once complete, set aside and let cool.

During this time, cut your bread open and spread your caprino cheese all over, in every direction and every angle of your loaf. 🤤

Next, add your caramalised onions and devour!
