Nutrition:

Persimmons are sweet fruit that are seasonal in autumn and in the winter. They are widely consumed in Asia. They contain a very high quantity of vitamin A and potassium. Vitamin A is fundamental for maintaining healthy eyesight, for the immune system and for reproduction. Vitamin A deficiency leads to a disease called xerophthalmia. This is very common in young children and pregnant women, and it is the inability to see in low light. Potassium is essential for growth and development. Potassium deficiency leads to high blood pressure, mental confusion and an irregular heartbeat. Persimmons are also rich in tannins that have antimutagenic, antioxidant and anticarcinogenic properties. The main macronutrients present in persimmons are carbohydrates. Persimmons are therefore rich in sugar and they can boost your energy. They are ideal for breakfast to start your day or as a snack before working out. Although rich in natural sugar, studies have shown that they are a potent tool for obesity and diabetes, due to the presence of proanthocyanidin. Persimmons are a good target for the development of new products, due to their high bioactive compounds content. The main products developed in the food industry with persimmon are juice, vinegar, dehydrated fruit, chips, ice-cream and jam.
