Cherries are fruit that are rich in vitamins and antioxidants. They contain a high amount of vitamin C (ascorbic acid) which has antioxidant and anti-inflammatory properties. Studies have shown that the consumption of cherries decreases oxidative stress, blood pressure, arthritis, muscle soreness and they improve sleep. The antioxidants compounds found in cherries such as anthocyanins and cyanidin, scavenge the free radicals (ROS) in our body, decreasing oxidative stress and improving inflammatory conditions such as arthritis. Research from the British Journal of Nutrition and Sport Nutrition also found that cherries reduce blood pressure and reduce muscle soreness. One study observed that the consumption of cherries for seven days was beneficial in minimising post-run muscle pain. Another study found that the consumption of cherry tarts aid recovery after strenuous exercise. Sweet cherries are also enriched with melatonin which has sleep promoting properties. Different studies found that cherries improve the quality and duration of sleep and can be a therapeutic option for those who suffer from insomnia. The recommendation amount is 14 cherries a day, counting as one of your 5-a-day.
What You Need:
200g of cherries
50ml of water
30ml of olive oil
100g of icing sugar
100g of brown sugar
50g of cherry jam
200ml of plant based milk
200g of plain flour
1 table spoon of baking soda
2 table spoons of mandarin vinegar
1 table spoon of lemon juice
A pinch of sea salt
Method:
Pre-heat your oven to 170 degrees.
Start by cutting each one of your cherries in half and de-seed them all. Then, set them aside for later.
Next, prepare the mix. Add your flour, baking soda, icing sugar, brown sugar, olive oil, milk, water, cherry jam, mandarin vinegar and lemon juice in a large bowl and stir aggressively. Keep stirring until you get a think consistency. At this point, add most of your half-cherries into the mix along with the salt and continue to stir. Make sure you leave a few half-cherries behind.
Place your mixture into a baking bowl and put it in the oven.
After 30 minutes, return to your cake. Make sure your cake is transforming into a golden-brown look. From here on out, check on your cake every 10 minutes. Once you reach 50 minutes, lower the heat of the oven to 130 degrees.
At this point, put the rest of your half-cherries into the mix, placing them on top.
Bake for a final 10 minutes.
Once finished baking, take the cake out of the oven and let it rest for 20 minutes.
Place the cake onto a decorative plate, slice and serve.
Serve with some seasonal fruit to finish the look! đđđ
