Cranberry is a fruit native of North America that contains a variety of bioactive compounds such as flavonoids, anthocyanins, tannins, which are responsible for the antioxidant, antimicrobial and anticarcinogen properties of the fruit. Particularly, these phytochemicals are responsible for preventing urinary tract infections. Growing evidence has shown that cranberries have unique properties that help fight against bacteria like Escherichia Coli that colonises the urethra. It prevents the adhesion of the bacterium to the uroepithelial cells. This unique function has also been observed in Helicobacter Pylori, which is another pathogen known for causing stomach ulcers. This fruit is a rich source of ascorbic acid (vitamin C), which is essential for maintaining healthy skin, blood vessels, cartilage and bones. If you suffer from urinary tract infection, a daily consumption of cranberries, cranberry jam or juice is recommended!
What You Need
850g of cranberry
1/4 of a lemon
400g of caster sugar
Method
Cooking Time: 45 minutes
Add your cranberries into a cooking put on a low heat and stir gently for 10 minutes until they produce juice.
At this moment, squeeze your quarter lemon into the pot and add your sugar. Continue to stir for an additional five minutes without adjusting the temperature.
Add a lid to your pot and leave for 20 minutes.
Return to your pot and stir for another 10 minutes slowly raising the temperature.
Let cool to room temperature and there you have your lovely, Blood Red Cranberry Jam.
Serve on a warm slice of toast. 🍞
