Name a better time to make spring rolls than in spring… you can’t!

These delicious spring rolls contain a special ingredient: tarragon. This herb has an intense and unique flavour (a mix of sweet aniseed and mild vanilla) and it is typically used in French cuisine. It is commonly called “King of Herbs”, due to its popularity in France. It is suitable for different types of dishes that include fish, meat or soups. There is also another type of tarragon which is used in Russia and Middle Asia. This type of tarragon is used medically to treat gastrointestinal disorders. Recent studies have shown that tarragon has a positive impact on blood glucose management. It regulates blood sugar levels, displaying antidiabetic and hypoglycaemic activities. Tarragon represents an optimal option for developing dietary and sport supplements with anti-hyperglycaemic activity. Tarragon is also a very good remedy for tooth ache and sore gums. Its leaves contain eugenol, an essential oil that gives pain relieving effects. It is known that people used to chew the leaves or drink it in teas to counteract oral problems such as cavities, loosening of teeth and the fragility of gums. The herb is rich in vitamin A, vitamin C, iron and potassium. Therefore, it improves visual acuity and skin health due to the vitamin A content; it prevents iron deficiency anaemia due to the iron and vitamin C content; and it helps regulate fluid balance, nerve signals and muscle contraction due to the potassium content. What You Need (1 spring roll):
30 g of spring roll pastry
32 g of mushrooms
12 g of leeks
4 g of tarragon
Allergens: gluten, eggs, milk
Health Claims: a source of pantothenic acid, chloride and selenium
Method:
1. Cut your mushrooms, leeks and tarragon in very small pieces (you can use a blender if it is easier) and mix
2. Take one pastry sheet and add your mix
3. Roll it up in the shape of a spring roll
4. Place it with folded sides down in the oven for 25 min at 180 degrees
